Like so many of us who watched the first episode of Stanley Tucci’s Searching for Italy I made the zucchini spaghetti dish he raved about. You to start it the day before and yes it’s very delicious but I’m sure it tastes better eating it on the Amalfi Coast! Here’s how I did it:
Ingredient:
2-3 medium zucchini sliced into thin rounds
2-3 cups pure sunflower oil for frying
A little butter: I used a heaping tbs
1/2 to full box of dried spaghetti
Fresh grated Parmesan cheese
fresh basil sprig for garnish
In a large sauce pot heat the oil till very hot. Fry the zucchini till it turns golden and slightly crisp. Let it dry on paper towel or brown paper to absorb some oil, Refrigerate overnight. The next day heat a skillet till it’s hot, add the zucchini and butter and heat till it starts to break apart, I added a tiny pinch of salt. Cook your spaghetti as per box, drain it and add to the skillet and combine with zucchini. Serve in bowls with freshly grated Parmesan cheese and a sprig of fresh basil.
