Yu choy is a very mild leafy green, delicious in any recipe calling for a spinach type green. This dish is cooked in a spicy brown sauce with lo mein noodles and Vegan beef cubes, real beef or chicken can be substituted if you eat meat. Here’s how I do it:
Ingredients:
i bunch of yu choy, stems trimmed off
2 garlic cloves
1” grated ginger
crushed red pepper or fresh red cayenne pepper, chopped fine
3 tbs oyster sauce
2 tbs rice vinegar
1 tbs agave nectar
1tsp sesame oil
lo mein noodles or rice
In a skillet add some olive oil and sauté the garlic, ginger and pepper, add pinch of salt. Add the yu choy with stems trimmed off and simmer for 10 minutes till softened. Add oyster sauce, vinegar, agave and sesame oil, incorporate. Create an empty spot in center of skillet and add the vegan beef (I like Gardein beef tips). Simmer 8 mins then stir everything together and simmer another 3 mins. Serve over lo mein noodles or fragrant rice.
