These are velvety smooth soft in the center cookies perfect balance of sweet and salty. This recipe makes about 2 dozen cookies. Here’s how I do it:
Ingredients
1/2 cup butter or vegan butter
1 cup white sugar
1 cup smooth peanut butter
1 tbs vanilla extract
1 and 1/2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
2-3 tbs non dairy milk
6-10 oz semi sweet chocolate chunks or chips
In a large bowl let the butter sit till soft, add sugar and vanilla and with a hand mixer cream it till smooth then add peanut butter and blend again till combined. In a separate bowl add the dry ingredient, flour, salt and baking soda and mix together. Add the dry ingredients to the wet and combine with a wooden spoon not the mixer. Add a few spoons of milk if the dough is too dry. Add the chocolate chunks. Roll them into small balls size of a small plum and place on baking sheets covered in parchment paper. Bake in preheated to 375F oven in center rack for 15-18 mins. Remove when very light golden brown and cool completely, they should remain soft in the middle and crispy on the edges.
