This is a delicious vegan breakfast, entirely plant based you’d never know it’s vegan eggs! Here’s how I do it:
Ingredients:
2 slices per person vegan bacon, I find Sweet Earth brand the best
1/2 cup Just Egg vegan eggs per person
1 bunch of mixed fresh herbs I used parsley, basil and oregano
1/2 cup chopped or shredded vegan cheese I used cheddar by Miyokos
In a large skillet add about 1tbs olive oil heat on medium then add your vegan bacon simmer 2-3 mins per side then remove and place on paper towels to dry. Rough chop your herbs or use dried if you don’t have fresh. Add the liquid Just Egg to the skillet then add the herbs, S&P and begin stirring to cook, then add the cheese and continue to cook about 3-4 minutes till cheese is melted and eggs achieve desired firmness. Serve immediately with the vegan bacon.
