Swiss Chard, Shitake Mushrooms and Seared Tofu in Garlic Sauce With Fresh Herbs

This is a healthy tasty dish great over rice or quinoa and protein of choice, plant based or meat can be used but I made it with tofu. Fresh herbs are great but dried are fine if you don’t have. Here’s how I do it:


Ingredients

1 bunch Swiss Chard, stems removed torn by hand in pieces

1 package shitake mushrooms or mushroom of choice

6 cloves garlic, chopped

super firm tofu or protein of choice

fresh herbs: I’m using parsley, basil and marjoram, or dried

crushed red pepper or whole chili pepper

olive oil


Place the Swiss chard in large skillet fill with a little water and steam for 5 mins, drain chard in colander set aside. Add a bit of olive oil to the skillet and sear the protein on each side a few mins then flip, add a bit of salt then remove and set aside. Add a few tbs of olive oil to the skillet heat then add the garlic and pepper and some salt, simmer a few mins. then add the chard and sauté 5-8 mins, then add the mushrooms and the chopped herbs and simmer till mushrooms are softened around 5 mins then add the protein and simmer another few mins till it’s piping hot, serve on its own or grain of choice or pasta.
