Recently I made spin gnocchi it was a large batch so I froze the remainder and cooked them and added pesto and sun dried tomatoes so easy and delicious.
Ingredients
Spinach gnocchi: see past recipe to make them or any store bought gnocchi is fine
1/2 cup pesto sauce see my past recipe or store bought
1/2 cup sun dried tomatoes
parmesan cheese to grate on top
I prefer sundried tomatoes not in oil, if you’re using these add them to a bowl of warm water for 15 mins to soften then drain, squeeze and chop in small pieces. Set aside. Boil your gnocchi drain but keep in the pot on a low flame add the pesto sauce and sundried tomatoes and toss till fully incorporated then serve in bowls with fresh grated Parmesan cheese.
