Spinach Gnocchi with Broccoli and Pesto Sauce

You can use any type of gnocchi but I had some of my home made spinach gnocchi that I froze last time I made them and works well with broccoli, store bought pesto is fine too or scroll back for my home made sauce. Here’s how I do it:

Ingredients

1 head broccoli cut into small florets and steamed till fork tender

4 cloves garlic chopped

1 tsp red pepper flakes

1 package of gnocchi

1/2 cup pesto sauce

grated Parmesan cheese for topping, vegans use Vegan Parm


In a large skillet add 2-3 tbs olive oil heat then add the garlic and pepper flakes simmer 2-3 mins then add the broccoli and combine add salt to taste and simmer together for 8-10 mins, stirring often. Meanwhile boil your gnocchi and when they rise scoop them out of the water and add them to the skillet with a little pasta water then add the pesto and combine/simmer 2-3 mins then serve in bowls with a sprinkle of parmesan cheese.
