This is a shortcut I do sometimes when I want a delicious Indian dish but not a lot of time I combine a pre-made (good quality type) dish and fresh ingredients to make it taste fully home made. For this dish I used Trader Joe’s Chana Masala which is a chickpea curry, you can add protein to it but I like just with added veg, here’s how I do it:
Ingredients
1 package frozen Chana Masala
1 large bag of fresh spinach
2-3 cloves garlic chopped
1/2 red onion chopped
1” ginger grated
1 hot chili pepper chopped or dried chili flakes 1/2 tsp
In a large skillet heat 1-2tbs neutral oil till hot then add the onion, garlic, ginger and pepper simmer 3 mins, add a pinch of salt. Add the spinach in large batches till wilted then add the Chana Masala and simmer till its all incorporated and piping hot, great served over basmati rice. Chopped cilantro on top is a great garnish.
