It's finally cooler weather even here in Socal so it's great to make a cozy soup like this one with bright purple cauliflower, potato for creaminess and apple for flavor, Vegan and delicious. Here's how I do it:
Ingredients:
1 large head of purple cauliflower, chopped in small pieces after removing the stem
1 large potato, cubed in small pieces
1 small onion
2 apples, any type I prefer Granny Smith, peeled, cored and cubed
4 cups vegetable stock or water
In a large pot add some olive oil to cover the bottom. Add onions and simmer for a few minutes then add the potato, cauliflower and apple and simmer a few more minutes. Add salt and pepper. Add vegetable stock or water and cover pot, simmer till everything has softened. Use an immersion blender to make a smooth creamy consistency or use a standard blender and return to pot. While piping hot serve in soup bowls. This one is garnished with marjoram leaves and bee pollen you can have as it or any chopped herb garnish: basil, parsley or go non vegan and add grated cheese of your choice on top.
