There are many ways to make vegan sushi, using beefsteak tomatoes to mimic salmon is a fun easy healthy way to enjoy sushi. Here’s how I do it:
Ingredients:
2-3 beefsteak tomatoes
sushi or sticky rice, about 1 cup
asian marinade: I like Soyaki from Trader Joe’s or just combine soy sauce, sesame oil, rice wine vinegar and some spicy pepper oil or sriracha
Wasabi and pickled ginger to garnish (optional)
Make an X on the top of each tomato with a sharp knife then place the tomatoes in a pot of boiling water for 3-4 mins. Remove and place immediately in an ice water bath to cool them. Dry them off, the skins should peel off easily. Cut around the core, leave out the center with seeds and juice then slice the flesh in strips. Fill a bowl with the marinade and let the strips soak for at least 20 mins. Cook the rice and after it’s cooled form it into oval shaped pillow beds. Place tomato strips on rice beds, garnish with pickled ginger, use the marinade as a dipping sauce, add a little wasabi to it (optional)
