The key to making this simple classic pizza is by using the freshest and best ingredients, this is the basis of Italian cuisine: non fussy with a focus on the best quality products. You can use any crust, store bought, home made etc. I bought fresh ready made pizza dough and stretched it to about 12”, you can make it as big or small as you like. Here’s how I do it:
Ingredients:
1 pizza crust
fresh tomato sauce, I used whole Marzano tomatoes simmered for 15 mins with extra virgin olive oil, garlic, a pinch of red pepper flakes and salt. Let it cool.
fresh mozzarella: use best quality possible packed in water, slice it super thin
Romano cheese for sprinkling
fresh basil about 1/3 cup, don’t use dried
sliced black olives (optional)
Heat your oven to 420F. Place the crust on a pizza pan, spread sauce on, not too thick. Layer the mozzarella on then add the olives, basil leaves and sprinkle with Romano cheese. Give it a drizzle of extra virgin olive oil. Bake for 8-10 mins till crispy and golden.
