I made these recently and they were a hit with my friends so great for an energy boost before working out and no added sugar! The peanut glaze has sugar you can skip that step if you want completely sugar free but it’s just a small dip per ball. Food processor needed.
Ingredients
1 cup almonds
12-14 dates pit removed and soaked in warm water for 30 mins
3 heaping tbs dark cocoa powder
1 tbs coconut oil
pinch of salt
1 tsp vanilla extract
2 heaping tbs peanut butter
1/2 cup shredded dried coconut unsweetened
For Peanut Dip Glaze
1/2-3/4 cup peanut butter chips the kind you use for baking
In a food processor add the almonds and crush till fine. Next add the dates, cocoa, vanilla, salt olive oil and peanut butter and process then add the coconut and combine. Pour out onto a surface and roll into small balls. Refrigerate for 2 hours. Place the peanut butter chips in a bowl over a pot of boiling water and stir till melted then dip each ball on one end in the peanut chip glaze and refrigerate again. Eat at room temperature and ok to freeze if you made too many.
