Chocolate Coconut Cranberry Energy Bars

These are so tasty and totally natural, sweetened only with dates, you do need a food processor to make these and so much more economical than paying a lot for store bought energy bars. Here’s how I do it:

Ingredients

1 and 1/2 cup almonds, you can mix other nuts in, I added walnuts and a few cashews

12-14 medjool dates

1/2 cup good quality unsweetened cocoa powder

1/2 cup unsweetened shredded coconut

1 tbs coconut oil

1 tsp vanilla extract

handful of dried cranberries or any other dried fruit you like


First, cut the dates in half, remove the pit and soak in warm water for 20 mins. In a food processor add all the nuts and pulse till they are fully ground, I like to have them slightly ground not to a powder. Next drain the dates squeeze out excess water add to the food processor with the oil, cocoa and extract and pulse till fully combined then add a

inch of salt and add the coconut and cranberries and just pulse a few times to combine. It should have the consistency of a slightly moist paste. Pour into a parchment or plastic film lined tray and press down till it’s about 1/2” thick cover with another sheet of plastic film and press so it’s even and flat. Refrigerate for 3 hours then remove and cut into desired size, keep them in the refrigerator until you want to eat one.
